Persian saffron ice cream — a creamy, fragrant frozen dessert infused with threads of saffron and a hint of rosewater — is surprisingly straightforward to make at home. This recipe yields a rich, custard-style ice cream with the floral, warm notes that define traditional Persian versions.

Ingredients

Makes about 1 quart

  • 2 cups whole milk
  • 1 cup heavy cream
  • 2/3 cup granulated sugar, divided
  • 4 large egg yolks
  • 10–12 saffron threads
  • 2 tablespoons warm milk or water (for blooming saffron)
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon rosewater (optional)
  • 2–3 tablespoons chopped toasted pistachios or crushed pistachios, for serving (optional)

Saffron preparation

Place the saffron threads in the warm milk or water and let sit until the liquid is a deep golden color and fragrant—about 10 minutes. Method

  1. Warm milk, cream, and half the sugar: In a medium saucepan, combine milk, cream, and 1/3 cup of the sugar. Warm over medium-low heat, stirring, until the sugar has dissolved and the mixture is steaming but not boiling.
  2. Whisk yolks: In a bowl, whisk the egg yolks with the remaining 1/3 cup sugar until smooth and slightly pale.
  3. Temper the yolks: Add a ladleful of the hot milk mixture to the yolks, whisking constantly. Repeat with a second ladle to gently raise the temperature, then pour the tempered yolks back into the saucepan.
  4. Cook to custard: Return the pan to low heat and stir constantly with a wooden spoon or spatula, scraping the bottom, until the custard thickens enough to coat the back of the spoon and leaves a clear line when you run your finger through it. Remove from heat—do not boil.
  5. Add saffron and aromatics: Stir in the bloomed saffron with its liquid, vanilla, and rosewater if using. Let the custard cool slightly (a few minutes).
  6. Chill thoroughly: Transfer the custard to a bowl, cover with plastic pressed to the surface, and chill in the refrigerator until completely cold—at least 2 hours, preferably longer. Chilling is essential for a smooth texture.
  7. Churn: Process the chilled custard in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  8. Freeze to firm: Transfer the ice cream to a lidded container and freeze until firm, several hours or overnight. If you don’t have an ice cream maker, freeze in a shallow pan and stir vigorously every 30–45 minutes until creamy.

Chef notes

  • Saffron quantity: 10–12 threads gives a clear saffron color and aroma without bitterness. Adjust slightly to taste.
  • Texture control: For a lighter texture, increase the cream to 1 1/4 cups and reduce milk to 1 3/4 cups; keep the same custard technique. Over-churning can make ice crystals—avoid extended churn beyond set point.
  • Serving: Spoon into bowls and finish with a drizzle of rosewater (very sparingly) and chopped pistachios for contrast.
  • Storage: Store airtight in the freezer; best enjoyed within a few weeks for peak flavor.
