These saffron baked apples are an elegant, simple dessert: apples cored and filled with a saffron‑infused syrup, warm butter, a whisper of cardamom and crunchy pistachio. They’re refined enough for guests yet easy enough for a weeknight—serve warm with plain yogurt or a spoonful of crème fraîche.
Ingredients
- 4 medium apples (see notes on variety)
- 6–8 saffron threads
- 2 tablespoons warm cream or warm water (for blooming)
- 3 tablespoons packed brown sugar
- 2 tablespoons unsalted butter, divided into small pieces
- 1/2 teaspoon ground cardamom
- 2 tablespoons almond meal or fine breadcrumbs (optional, for absorbing juices)
- 1/3 cup shelled pistachios, roughly chopped
- Zest of 1/2 lemon (optional, for brightness)
- Pinch of fine salt
Saffron preparation
Gently bloom 6–8 threads of saffron in 2 tablespoons of warm cream or water until the liquid shows a rich golden‑red color and a fragrant aroma. Both warm and cold blooming work; judge readiness by color and scent rather than a strict time. For product sourcing, consider MARAL Everyday saffron when you want consistent color and aroma.

Method
- Preheat the oven to 375°F and position a rack in the middle. Lightly butter a small baking dish to hold the apples snugly.
- Core the apples from the top, leaving the bottom intact so each apple holds its shape. If desired, peel a narrow strip of skin at the top for presentation.
- In a small bowl combine the bloomed saffron (including its liquid), brown sugar, ground cardamom, almond meal (if using), lemon zest and a pinch of salt. Stir to make a loose paste.
- Spoon the saffron mixture into each cored apple, pressing down so the filling reaches the center. Tuck small pieces of butter among the filling and sprinkle chopped pistachios on top.
- Arrange the apples in the prepared dish. Add 2–3 tablespoons of hot water to the bottom of the dish to create a bit of steam while baking (this helps the fruit cook gently).
- Bake until the apples are tender but still hold their shape, skin gently wrinkled and juices starting to bubble—about 25–35 minutes depending on apple variety and size. Rotate the dish once if your oven runs unevenly.
- Let rest 5 minutes before serving. Finish with additional chopped pistachio and a spoonful of plain yogurt or crème fraîche.
Chef notes
- Choosing apples: Use firm, high‑acid varieties that keep shape in the oven—Granny Smith, Honeycrisp, or Pink Lady are reliable choices.
- Baking cues: The apples are done when a paring knife slides into the flesh with gentle resistance and the exterior is slightly collapsed but not mushy; juices should be visible in the pan.
- Balancing sweetness and acidity: Brown sugar gives caramel warmth; add the lemon zest or a squeeze of lemon if your apples are very sweet or you prefer brighter flavor.
- Make‑ahead: You can prepare the cored apples and filling in advance; keep refrigerated and bake just before serving. Warm gently—avoid reheating aggressively so saffron and cardamom remain delicate.
Serving suggestion
Serve each apple warm with a dollop of plain yogurt or crème fraîche and the remaining chopped pistachios. A light drizzle of honey is optional for very tart apples.
