Autumn spice meets a whisper of Persian warmth: these saffron pumpkin pancakes are tender, gently spiced with cardamom, and finished with chopped pistachio for crunch. Bloomed saffron gives a fragrant golden note; a light hand when mixing keeps the cakes soft. Serve them hot with maple syrup or plain yogurt.
Ingredients
- 1 cup (120 g) all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1/2 teaspoon ground cardamom
- 3/4 cup pumpkin purée
- 3/4 cup milk (dairy or unsweetened non-dairy)
- 1 large egg
- 2 tablespoons melted butter or neutral oil, plus more for the griddle
- 8–12 saffron threads
- Optional: 1/4 teaspoon cinnamon (if you like a warmer spice note)
- To finish: 2–3 tablespoons chopped pistachios, maple syrup or plain yogurt
Saffron preparation
Place 8–12 saffron threads in a small bowl and cover with 2 tablespoons warm milk (not boiling) or warm water. Let sit until the liquid turns a deep golden-red and the aroma is noticeable—this is your saffron bloom. For a short guide to blooming, see how to bloom saffron. If you use MARAL Everyday saffron, the bloom will yield a vivid color and fragrant lift.
Method
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cardamom, and cinnamon (if using).
- In a separate bowl, whisk the pumpkin purée, milk, egg, and melted butter until smooth. Stir in the bloomed saffron and any remaining liquid.
- Pour the wet ingredients into the dry and gently fold with a spatula until just combined. The batter should be slightly lumpy—stop once you no longer see large dry streaks. Overmixing makes pancakes tough.
- Let the batter rest 5–10 minutes. This relaxes the gluten and helps a tender crumb.
- Heat a nonstick or well-seasoned griddle over medium heat and brush lightly with butter or oil. Test with a small drop of batter: it should sizzle gently and spread slightly.
- Spoon batter (about 1/4 cup per pancake) onto the griddle. Cook until bubbles form across the surface and the edges look set, about 2–3 minutes. Flip and cook the second side until golden and springy to the touch, about another 1–2 minutes. Adjust heat if pancakes brown too quickly.
- Keep finished pancakes warm in a single layer on a tray in a low oven, or serve immediately.
Chef notes
- Saffron threads: measure by threads, not weight—8–12 threads give a clear floral color and aroma without bitterness.
- Griddle cues: look for many small bubbles and set edges before flipping; the second side should be golden and slightly springy.
- Texture: a few lumps in the batter are desirable. Stirring less preserves tenderness.
- Leftovers: cool, then store pancakes layered with parchment in the refrigerator for 2–3 days; reheat gently in a skillet or oven.
Serving suggestions
Stack pancakes, scatter chopped pistachios, and drizzle maple syrup or dollop plain yogurt for a bright contrast. A final pinch of crushed saffron threads over yogurt makes a pretty, fragrant finish.
