These saffron roasted carrots bring a refined, seasonal side to the table: caramelized edges, tender centers, and a delicate saffron perfume balanced by tangy whipped feta and crunchy pistachio. The technique is simple—bloom the threads, coat the carrots, roast for color, then finish with bright acid and creamy salt to balance the sweetness.
Ingredients
- 1½–2 lb carrots (mixed sizes or baby carrots), peeled if preferred
- 3 tbsp olive oil
- 1–1½ tbsp honey or maple syrup
- 8–10 saffron threads
- 2 tbsp hot water (or warm milk for a richer finish)
- Salt and freshly ground black pepper
- 6 oz feta, crumbled
- 2–3 tbsp plain Greek yogurt or 1–2 tbsp cream (to loosen the feta)
- 1 tbsp lemon juice, plus extra lemon wedges to serve
- ¼ cup shelled pistachios, roughly chopped
- 2 tbsp chopped flat-leaf parsley or dill for garnish
- Finishing drizzle of good olive oil (optional)
Saffron preparation
Bloom saffron to coax its color and aroma into the dish. Place 8–10 threads in a small bowl and cover with about 2 tablespoons of warm water (or warm milk for a silkier note). Look for a rich golden-red color and a noticeable saffron scent—those cues mean it’s ready.

Method
- Preheat the oven to 425°F. Line a rimmed baking sheet with parchment for easy cleanup.
- Trim carrots to uniform thickness: halve thick carrots lengthwise so pieces roast evenly. Pat dry.
- In a large bowl combine olive oil, honey, a pinch of salt, pepper and the saffron infusion (pour any settled color). Toss the carrots until evenly coated.
- Spread carrots in a single layer with space between pieces—crowding creates steam, which limits caramelization.
- Roast 20–30 minutes, turning once halfway. Look for deeply caramelized, slightly darkened edges while the centers remain tender when pierced with a fork. Smaller or thinner carrots will finish sooner; larger carrots need more time.
- While carrots roast, make the whipped feta: blend crumbled feta with Greek yogurt (or cream), 1 tablespoon lemon juice and a drizzle of olive oil until smooth but still spreadable. Taste for salt—feta is salty, so add sparingly.
- When carrots are done, transfer to a serving platter. Finish with a squeeze of lemon, a scatter of whipped feta, chopped pistachios and chopped herbs. Add another light drizzle of olive oil if desired.
Chef notes
- Roasting cues matter more than strict times: aim for visible caramelization on the edges and fork-tender centers. That contrast—sweet, slightly charred exterior and soft interior—is the point.
- If carrots are small and uniform, lower the oven to 400°F and check earlier. For large carrots, cut into consistent pieces so roasting time is even.
- Blooming options: warm liquid blooming is quick and reliable; cold or ice blooming can produce subtler color. Use the visual cue of a rich golden infusion rather than a precise minute count.
Serving suggestions
Serve warm or at room temperature alongside roast chicken, grilled fish, or as part of a mezze spread. The dish balances sweet and bright—add an extra squeeze of lemon or a light vinegar drizzle if you prefer more acidity. Leftovers keep refrigerated for 2–3 days; reheat gently to preserve texture.
