A rustic, elegant galette that brightens fall apples with saffron and warm cardamom. Threads of saffron are gently bloomed and folded through the filling; chopped pistachios add texture and Persian character. The result is approachable—serve warm for soft filling or at room temperature for the crispiest crust.
Ingredients
Makes one 9–10" galette
- 1 1/4 cups all-purpose flour, plus extra for dusting
- 1/2 tsp fine sea salt
- 8 tbsp (1 stick) cold unsalted butter, cubed
- 3–4 tbsp ice water
- 3 medium apples (mix of tart and sweet, e.g., Granny Smith + Honeycrisp)
- 10–12 saffron threads
- 2 tbsp warm water or milk (for blooming saffron)
- 1/3 cup granulated sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp ground cardamom
- 1 egg + 1 tbsp cream or water (egg wash)
- 1/3 cup shelled pistachios, roughly chopped
- Turbinado sugar for sprinkling (optional)
Saffron preparation
Bloom the saffron to extract color and aroma: gently crush the threads between your fingers, then steep them in 2 tablespoons of warm (not boiling) water or milk until the liquid takes on a deep golden-red hue and a clear saffron aroma emerges. This can take a few minutes—use the visual color and scent as your cue.

Method
- Make the dough: In a bowl, whisk flour and salt. Rub cold butter into the flour with fingertips or pulse briefly in a food processor until pea-sized crumbs form. Add ice water, 1 tablespoon at a time, until the dough holds when pressed. Form a disk, wrap, and chill at least 30 minutes.
- Prepare the filling: Core and slice apples into 1/8–1/4" slices—aim for even thickness so they cook uniformly. Toss slices with lemon juice, sugar, cornstarch, and cardamom. Stir in the saffron infusion; reserve any sediment if you want more color. Let sit 10 minutes so flavors settle.
- Assemble: Preheat oven to 400°F with a baking sheet inside. On a lightly floured surface, roll the chilled dough into a 12" circle. Transfer to parchment on a flat baking sheet. Pile the apple slices in the center, leaving a 2" border. Arrange the slices in a loose, overlapping spiral—don’t press them flat; small air gaps help the edges crisp.
- Fold and finish: Fold the dough edge over the filling in pleats to create the galette rim. Brush the crust with egg wash and sprinkle pistachios over the apples and rim. Add a scatter of turbinado sugar if using.
- Bake: Slide the galette (on the parchment) onto the preheated baking sheet. Bake until the crust is deeply golden and the fruit juices are bubbling—usually 35–45 minutes. Look for golden edges and steady bubbling as doneness cues; if the rim browns too quickly, tent loosely with foil.
- Rest and serve: Transfer to a rack and let cool 15–20 minutes so juices settle. Serve warm for silky filling or at room temperature for a crisper crust.
Chef notes
- Choosing apples: Combine a firm, tart apple with a sweeter variety for balanced texture and flavor. Slice uniformly—very thin slices collapse too much; very thick slices take longer to cook.
- Keeping the crust crisp: Bake on a preheated sheet to set the bottom quickly. Avoid overfilling; excess juice softens the dough. Cooling on a wire rack prevents trapped steam from softening the base.
- Folding the galette: Make small, regular pleats rather than one big fold—this secures the filling and creates an elegant rustic edge.
- Storing: Keep at room temperature for up to 24 hours; refresh in a warm oven for 5–8 minutes before serving if needed.
Serving suggestions
Serve plain or with lightly whipped cream, a scoop of vanilla ice cream, or a dollop of labneh sweetened with a touch of honey. A final sprinkle of chopped pistachio signals the Persian inspiration and adds fresh crunch.
