Ingredients

Method

  1. Pat the shrimp dry and season lightly with salt and pepper.
  2. Heat a large skillet over medium-high heat. Add the olive oil and let it shimmer—hot but not smoking.
  3. Add the garlic and optional red pepper flakes; sweep the garlic around the pan for about 20–30 seconds until fragrant. Do not let the garlic brown.
  4. Arrange the shrimp in a single layer and cook without moving until the undersides are opaque and gently golden, about 1–2 minutes depending on size. Turn the shrimp and cook the second side until just opaque and firm to the touch—avoid stiff or rubbery texture.
  5. Lower the heat to medium. Pour in the saffron infusion and lemon juice, scraping any browned bits from the pan. Add the butter, if using, and swirl the pan until the butter melts and the sauce slightly thickens—this should take about 30–60 seconds. Taste and adjust seasoning.
  6. Remove from heat, stir in lemon zest and parsley, and serve immediately so the shrimp remain tender.
