This simple, elegant side showcases saffron’s warm floral perfume against caramelized, nutty cauliflower. Saffron and lemon brighten the roast while an optional yogurt sauce adds cool creaminess—perfect with roasted meats, grain bowls, or a simple salad.

Ingredients

  • 1 large head cauliflower (about 1.5–2 lb), cut into florets
  • 2–3 tbsp extra-virgin olive oil
  • Salt and freshly ground black pepper
  • Juice of 1/2 lemon (about 1 tbsp)
  • 10–12 saffron threads (about 1/8 tsp)
  • 2 tbsp warm water (or warm milk for a richer note)

Optional yogurt sauce

  • 1/2 cup plain Greek yogurt
  • 1 small garlic clove, grated or finely minced
  • 1 tbsp olive oil
  • Pinch of salt and a squeeze of lemon

Saffron preparation

Gently bloom saffron so its color and aroma infuse the dish. Crush the threads slightly between your fingers, then steep them in 2 tablespoons of warm water or milk until the liquid is a rich golden-red and fragrant—typically several minutes with warm liquid, longer if cool. Look for a visibly colored infusion and a noticeable floral-honey aroma rather than relying on an exact time.

Method

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment for easy cleanup.
  2. Toss cauliflower florets with olive oil, a generous pinch of salt, and a few grinds of pepper so every piece is lightly coated.
  3. Spread florets in a single layer on the baking sheet—avoid overcrowding, which steams rather than roasts.
  4. Roast 25–35 minutes, turning once halfway through, until florets are deeply golden at the edges and easily pierced with a fork. Look for caramelized brown spots and a tender interior as your cues.
  5. While the cauliflower roasts, combine the saffron infusion with lemon juice. Stir to blend.
  6. When cauliflower is done, transfer to a serving bowl and immediately drizzle the saffron-lemon mixture over the hot florets, tossing gently so the color and aroma distribute evenly. Taste and adjust salt and lemon as needed.
  7. If using, whisk together the yogurt sauce ingredients and serve on the side or spoon over the warm cauliflower for contrast.

Chef notes

  • Roasting cues: color and texture matter more than exact minutes. Smaller florets brown faster; a crowded pan can double the cooking time.
  • Saffron amount: a little goes a long way. If you prefer a subtler note, use fewer threads; for a more pronounced color, increase slightly.
  • For a richer finish, bloom saffron in warm milk instead of water and finish with a light drizzle of good olive oil.
