Bright, floral and quietly luxurious, a saffron latte is a simple café-style drink that highlights saffron’s warm floral notes without overpowering the cup. This recipe makes a single hot or iced saffron vanilla latte using espresso or strong brewed coffee and explains saffron infusion, milk choices, sweetness and the iced variation.

Ingredients (single serving)

  • 8–10 saffron threads
  • 2 tablespoons warm milk or water (for blooming)
  • 1 shot espresso (or 2 fl oz / 60 ml very strong brewed coffee)
  • 8 oz (about 240 ml) milk of your choice
  • 1 tsp pure vanilla extract
  • 1–2 tsp simple syrup or honey, to taste
  • An ice cup and 4–6 oz ice (for iced version)

Saffron preparation

Gently bloom the saffron so the color and aroma develop before it meets hot milk. Crush the threads lightly between your fingers or the base of a spoon, then combine with 2 tablespoons of warm (not boiling) milk or water. Method

  1. Prepare coffee: pull one espresso shot or brew 2 fl oz of very strong coffee. Keep it hot for the warm version or cool it for iced.
  2. Bloom saffron: as above, crush and steep threads in 2 tablespoons warm milk or water until colored and aromatic.
  3. Sweeten and flavor: dissolve 1–2 tsp simple syrup or honey into the hot espresso/coffee. Stir in 1 tsp vanilla extract.
  4. Steam or heat milk: heat 8 oz milk until steaming but not boiling. If you have a steamer, create a small amount of microfoam. Stir the saffron infusion into the milk so the color and aroma distribute evenly.
  5. Assemble (hot): pour the sweetened coffee into a cup, then gently add the saffron milk. Hold back foam with a spoon, then spoon foam on top. Optional: thread a single saffron strand across the foam for garnish.
  6. Assemble (iced): combine sweetened coffee and the saffron infusion; fill a glass with ice, pour over the coffee mixture, then top with cold milk. Stir briefly. If you bloomed saffron in warm milk, cool that infusion before adding to the iced drink to avoid warming the ice too much.

  • Milk choices: Whole milk yields the creamiest mouthfeel; oat or almond milk are excellent non-dairy options—heat gently and expect slightly different foam behavior.
  • Sweetness: Saffron is subtly floral and benefits from a touch of sweetness. Start with 1 tsp and adjust; simple syrup blends smoothly in cold drinks.
  • Intensity: Adjust saffron threads to taste. A little goes far—avoid adding too many threads at once.
  • Iced tips: Bloom saffron in a small amount of warm liquid then chill, or bloom directly in cold milk for a softer note. Assemble over plenty of ice to keep the drink brisk.
