Bright, simple, and instantly elegant—this saffron honey yogurt bowl pairs creamy Greek yogurt with a small, fragrant bloom of saffron, toasted pistachios, and seasonal fruit. It’s ideal for a quick breakfast or a refined snack; the saffron adds a floral, honeyed note without any fuss.
Ingredients
- 1 cup Greek yogurt (full-fat or strained)
- 6–8 saffron threads (a generous pinch)
- 1 tablespoon warm water or warm milk (for blooming)
- 1 tablespoon honey, plus extra for drizzling
- 2 tablespoons shelled pistachios, roughly chopped
- Seasonal fruit to taste (fresh figs, berries, or pomegranate arils work well)
- Flaky salt and a little lemon or orange zest (optional)
Saffron preparation
Place the saffron threads in the warm water or milk and let them bloom until the liquid is a rich golden color and fragrant—this commonly takes a few minutes with warm liquid. If you’d like more detail on the technique, see our guide on how to bloom saffron perfectly.
If you use MARAL Everyday Saffron, a small pinch yields a pronounced, delicate aroma and color; adjust the threads to taste.
Method
- Stir 1 tablespoon of honey into the saffron infusion until smooth. If the honey is very thick, gently warm the honey or the saffron-honey mixture just until it loosens and becomes pourable—avoid overheating.
- Place the yogurt in a bowl and smooth the surface with the back of a spoon.
- Drizzle the saffron-honey over the yogurt, allowing the golden threads and color to settle attractively on top.
- Scatter the chopped pistachios and fruit over the yogurt. Finish with a light pinch of flaky salt and a little citrus zest if using.
- Serve immediately. For a layered look, spoon some yogurt into the bowl, add a drizzle of saffron honey, then top with remaining yogurt, nuts, and fruit.
Chef notes
- Make the saffron-honey ahead: the infused honey keeps well at room temperature for a few days and is a quick way to dress multiple bowls.
- Use neutral warm milk (dairy or plant) for a creamier saffron bloom, or water for a purer floral note.
- Pistachios add texture and a traditional Persian pairing; almonds or walnuts work if preferred.
