Saffron Preparation
Place the saffron threads in a small bowl and pour 2 tablespoons warm (not boiling) milk or water over them. Let sit until the liquid is a deep golden-red and aromatic—this may take a few minutes. Method
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and both sugars until light and slightly fluffy, about 2–3 minutes by hand or with a mixer on medium speed.
- Add the egg and vanilla; mix until combined. Stir in the saffron infusion (including the threads) and lemon zest if using. The dough will take on a pale golden hue and a fragrant aroma.
- Fold in the dry ingredients just until a cohesive dough forms. Gently fold in the chopped pistachios—avoid overmixing.
- For firmer edges and less spread, chill the dough 20–30 minutes; chilled dough also makes shaping easier but is optional.
- Scoop or roll dough into 1.5-tablespoon mounds and place them 2 inches apart on the prepared sheets. Slightly flatten each mound with your palm or the bottom of a glass.
- Bake, rotating the pans halfway, until the edges are lightly golden and the centers still look slightly soft—about 10–12 minutes. The cookies will continue to set as they cool.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
